Yellowfin Tuna Taco

Grilled Yellow Fin Tuna with Mango Salsa and Cabbage Slaw

*This recipe is approximate. I didn’t write down exact measurements. My neighbor brought me over some fresh caught yellow fin and I used what was in my fridge and garden to fill in the rest of the dish. The meal was soo amazing that I just had to share.

I’m not sure how much the tuna weighed. If I had to guess, which I am, I would say I had four 6 oz pieces. This made 10 tacos.

Ingredients for Tuna

  • Yellow Fin Tuna
  • Olive oil
  • 2 cloves of garlic mashed
  • small handful of chopped cilantro
  • juice of a lemon (or lime)
  • salt and pepper

Ingredients for Salsa

  • 1 pineapple
  • 1 mango
  • 6 kumquats
  • 3 jalapeños
  • 1 clove of garlic
  • handful of chopped cilantro
  • handful of chopped onion chives
  • salt and pepper to taste
  • pinch of red pepper flakes (optional)
  • juice of a lime

Ingredients for Slaw

  • 1/2 red chopped
  • 1/4 head of cabbage
  • handful chopped cilantro
  • juice of a lemon
  • tablespoon of olive oil
  • salt and pepper to taste

Ingredients for Sauce

  • 1/2 a cup of mayo
  • 3 tablespoons of siracha (add more if you like it hot!)
  • pinch of salt


  1. Combine oil, lemon, garlic, chopped cilantro, and seasoning and pour over tuna as a marinade. Flip over tuna after a half hour.
  2. Core and dice fruit into small pieces.
  3. Combine all the fruit and salsa ingredients in a medium bowl and let stand in fridge until ready to serve.
  4. In another medium bowl combine chopped cilantro, lemon, oil, seasonings and thinly sliced cabbages. Let stand until ready to serve.
  5. In a small bowl combine mayo, siracha and salt.
  6. Start your grill and set to medium high heat. Brush grate with vegetable or corn oil.
  7. Make sure you have ready a clean bowl and piece of foil for tuna when its cooked and a clean dish towel to hold warmed tortillas.
  8. I cooked the tuna with skin on for 4 minutes on each side.
  9. Cook flour tortillas on grill until warmed and store in clean dish towel.
  10. Pull all your bowls out of the fridge and place out on counter so you can start your assembly line.
  11. Remove skin from tuna and dice in large chunks.
  12. I assembled all the tacos for my guests.
  13. Spread sauce on first, then, tuna, followed by salsa and then topped with slaw. Add your favorite hot sauce from some extra heat.
