This recipe is low-carb, requires no cooking, and has all of the flavor of full-fat chicken salad. It also holds very well, so it’s a great option for meal prepping and lunch packing.
PRO TIP: Use rotisserie chicken
For those of you who have read some of my other posts, I’m sure it came as no shock to see rotisserie chicken on the ingredient list. Roto chick is a no-brainer here – as it usually is – because it’s such a time saver!Â
For this recipe, rotisserie chicken is more than just convenient. The biggest reason I opt for rotisserie chicken is because of the moisture it adds to the dish. I used to make this recipe with baked chicken, but it always seemed to be a little too dry. Roto chick solves this problem and adds a whole new layer of flavor.
Low-Carb Lettuce Wraps
This chicken salad is delicious on its own, but a great way to mix it up is to wrap the chicken salad in Iceberg lettuce wraps. This low-carb option adds an extra crunch element to the chicken salad.
Romaine lettuce also works if that is more your style, but I have found that the bowl shape of the iceberg holds more chicken and makes for a better vessel. Personal preference.
Light Mayo and other substitutes
There are SO many ways to modify this recipe with a different binder/sauce/liquid. The reason that I prefer light mayo is because it maintains the same tang of regular mayo (which for me, is the flavor of chicken salad).
That being said, if you would like to get more creative and/or find a healthier substitute, you can just as easily use greek yogurt / give some of the other combos below a try (from allrecipes.com). I will definitely be experimenting in the future and will let you guys know if I find a good one!
Meal Prep Recommendations
Chicken Salad Lettuce Wraps hold super well in the fridge, so they are a great option for meal prepping.Â
I recommend portioning out five plastic bags / Tupperware containers with celery, walnuts, grapes, mayo, and black pepper. In four of the bags, add rotisserie chicken (it won’t hold till Friday if you prep on Sunday). Later in the week, buy another rotisserie chicken and add to the fifth bag for Friday’s lunch. Keep the iceberg lettuce leaves in a separate plastic bag so they stay crisp.Â

Chicken Salad Lettuce Wraps
Ingredients
- 5 oz rotisserie chicken
- 1 tbsp light mayo
- 1 tbsp walnuts chopped (roughly 6 walnuts)
- 1 stalks celery medium size
- 2 oz red grapes halved
- 1 tsp black pepper ground
- 2 leaves Iceberg lettuce
Instructions
Prep
- Shred rotisserie chicken.(I only use white meat and no skin).
- Finely chop the celery and walnuts. Halve the grapes.
Combine
- In a medium sized bowl, combine shredded chicken, chopped celery, chopped walnuts, halved grapes, black pepper, and light mayo. Stir.
- Scoop chicken salad mixture evenly onto two iceberg lettuce leaves. Wrap and enjoy!
