Hi everyone! I wanted to share a super quick snack recipe with you guys: Pepita PB Apple Slices. These Pepita PB Apple slices are phenomenal. More importantly – they are unbelievably easy. SO easy in fact, this could be the shortest blog post of all time.
Childhood Snack on Steroids
Everyone has had apples with peanut butter. There is a reason that the two together are a staple of childhoods in America – they always seem to hit the spot. All I’ve done here is put my own spin on a childhood classic by adding cinnamon and pepitas, and its taken my snack game to the next level.
Pepita PB Apple Slices taste almost like you’re eating apple pie. The cinnamon paired with the creaminess of the peanut butter and the texture of a thin sliced apple – it works. A healthy snack that tastes like dessert? Always a win in my book.
Slicing you apples thin makes all the difference in the world
Ratios people. That’s what it’s all about. Normally I cut my apples with one of those cute apple slicers that core and slice the apple (like this one), but HONESTLY I that’s a little too much apple for this particular snack.
If you want perfect ratios, slice your apples thin!
Don’t doubt the pepitas
What are pepitas you may ask? Pepitas are a special type of pumpkin seed that is less fibrous and significantly more tender than the traditional pumpkin seed.
If you’ve never used pepitas in a recipe before, you have to trust me on this one. They have a very delicate flavor and texture that goes GREAT with the cinnamon and PB on the apple slices. Pepitas are also low-calorie and full of vitamins and minerals – MID DAY SNACK #NEEDS.I
If you’re not totally sold yet on pepitas, don’t worry – you don’t have to commit to buying a full $14 bag at the store. Most grocery stores have dispenser sections for specialty items (like almonds, walnuts, etc) where you can take as much or as little as you need! (At my Whole Foods, pepitas sell for roughly $2.95/lb – it only costs 18¢ for one serving OR 92¢ for 5 servings)

Pepita PB Apple Slices
Ingredients
- 1 red delicious apple
- 1 tbsp peanut butter
- 1 tsp pepitas
- 1/4 tsp cinnamon
Instructions
- Thinly slice your apples to desired thickness (mine are typically a quarter inch to half inch thin).
- Spread peanut butter evenly across apples.
- Sprinkle on pipits and cinnamon. Enjoy!
