Life Goal: Find Ways to Make Chicken Less Boring
Hi Everyone!!!! This week we made one of my favorites: Prosciutto Wrapped Chicken!
Because chicken is such a basic, accessible protein that is widely considered “healthy”, it makes sense to include chicken in a lot of your recipes. My fiancé could, honest to God, eat plain chicken and vegetables for every single meal and not think twice. I’m a litttttttttle more high maintenance 😉
I CANNOT just eat plain chicken and vegetables for dinner. I can’t. If I don’t am forced to variety and have to choke down a boring piece of chicken, I know for a FACT that I will need to eat some kind of dessert afterwards to compensate.
For this reason, it seems like my whole *cooking* life has been centered around discovering ways to make chicken more flavorful.
I am sure that many of you can all relate, and that is why you are going to LOVE my Prosciutto Wrapped Chicken.
Easy Peasy Chicken Squeezey
This recipe is a testament to the fact that infusing flavor into your meals does NOT have to be an all-day affair.
This dish is seriously one of the fastest, easiest dinners you can make. It takes approximately 3-5 minutes of prep time to combine the ingredients into the masterpiece that is Prosciutto Wrapped Chicken
If you watched my video above, you probably thought to yourself: “Wow. This couldn’t get easier”. And guess what? YOU’D BE RIGHT.
The process is simple. First, you lay out your chicken on a baking sheet and spread each piece with Dijon mustard. Next, you will wrap each piece of chicken in cheese and then prosciutto and voila! You’re done.

Unforgettable flavor profile
Although making this chicken dish may be simple, this combination of prosciutto, mustard, and gouda cheese is anything but boring.
Each bite is bursting with cheesy, mustardy goodness. The salty, flavorful prosciutto crisps around the chicken as it bakes, locking in the moisture, creating an amazing texture profile.
Only one cooking tool needed: basic sheet pan
The only tool you need to make this recipe is a baking sheet. As always, I recommend laying down a sheet of aluminum foil to make the clean-up even easier.
While you absolutely CAN use a casserole dish to cook the chicken, I’d probably recommend using a sheet pan instead. Cooking with the sheet pan creates a nice crisp on the prosciutto and on the cheese as it drips down the chicken.
Why the Gouda?
Although prosciutto is the star of this dish, Gouda is the X factor here. Traditionally—in all of the recipes I have seen at least—Prosciutto Wrapped Chicken calls for provolone.
The first time we made this plate, we tried out the provolone. I had seen it used everywhere and figured it must be the way to go. So, even in response to Brendan’s protest (he doesn’t like provolone), I snuck it on there anyway, thinking that, once he tried provolone, he would realize how good it is in this dish.

I let Bren pick the cheese for our second attempt, and he opted for the gouda (I was BLOWN AWAY). Smoked gouda has such an incredibly delicious, yet SUBTLE flavor. Despite the name, it’s not overly smoky, and it cuts the sharpness of the mustard slightly, keeping the mustard from overpowering the dish, and allowing all of the flavors to fuse together nicely.
Why use thin sliced chicken?
It’s all. about. the ratios. Nothing is worse than having a big slab of chicken without the correct amount of sauce or toppings to add on! Purchase the thin-sliced breasts from the store or slice the regular-sized breasts in half at home and your proportions will be much more accurate.

Prosciutto Wrapped Chicken
Ingredients
- 4 pieces chicken breast thin sliced
- 4 slices prosciutto (you can double this if you really like no prosciutto)
- 6 slices smoked gouda
- 2 tbsp dijon mustard
Instructions
- Preheat the oven to 425 degrees.
- Distribute the chicken on a sheet pan.
- Using a basting brush, brush the dijon mustard evenly on the four breasts.
- Lay a couple slices of cheese on top of each piece of chicken to completely cover the breast.
- Wrap each piece of chicken in prosciutto. Use one to two slices per breast.
- Put the tray into the oven for 20 minutes.
