Roasted Sweet Potato Chips

These roasted sweet potato chips are a fan favorite side dish. They are super roasty and flavorful and pair well with all of my chicken dishes!

Ingredients

  • 3 sweet potatoes
  • 1 tbsp olive oil
  • salt to taste
  • pepper to taste
  • 1 tsp paprika

Instructions

  • Peel the potatoes.
  • Use a chef's knife to slice the potato into uniform 1/4 inch chips.
  • Line your sheet pan with aluminum foil or spray with a nonstick cooking spray.
  • Lay out your sweet potato chips in an even layer across the pan. Don't put them on top of each other or they won't roast evenly!
  • Brush on/drizzle olive oil onto the potatoes.
(I find the olive oil keeps the potatoes from drying out in the oven and adds a ton of flavor. To get the best distribution without a basting brush, throw the potatoes in a gallon zip lock bag with some olive oil and shake it up!)
  • Sprinkle salt, pepper, and paprika on top.
  • Bake at 450° and bake for 20-25 minutes
