Chicken Salad Lettuce Wraps

Chicken Salad Lettuce Wraps are low-carb, require no cooking, and have all of the flavor of full-fat chicken salad. It also holds very well, so it’s a great option for meal prepping and packing lunch.

Ingredients

  • 5 oz rotisserie chicken
  • 1 tbsp light mayo
  • 1 tbsp walnuts chopped (roughly 6 walnuts)
  • 1 stalks celery medium size
  • 2 oz red grapes halved
  • 1 tsp black pepper ground
  • 2 leaves Iceberg lettuce

Instructions

Prep

  • Shred rotisserie chicken.(I only use white meat and no skin). 
  • Finely chop the celery and walnuts. Halve the grapes.

Combine

  • In a medium sized bowl, combine shredded chicken, chopped celery, chopped walnuts, halved grapes, black pepper, and light mayo. Stir. 
  • Scoop chicken salad mixture evenly onto two iceberg lettuce leaves. Wrap and enjoy!
