Chicken Salad Lettuce Wraps
Chicken Salad Lettuce Wraps are low-carb, require no cooking, and have all of the flavor of full-fat chicken salad. It also holds very well, so it’s a great option for meal prepping and packing lunch.

- 5 oz rotisserie chicken
- 1 tbsp light mayo
- 1 tbsp walnuts chopped (roughly 6 walnuts)
- 1 stalks celery medium size
- 2 oz red grapes halved
- 1 tsp black pepper ground
- 2 leaves Iceberg lettuce
Combine
In a medium sized bowl, combine shredded chicken, chopped celery, chopped walnuts, halved grapes, black pepper, and light mayo. Stir.
Scoop chicken salad mixture evenly onto two iceberg lettuce leaves. Wrap and enjoy!
