If there is one recipe that is most crucial to Christmas, THIS IS IT. I have been baking and decorating Christmas Sugar Cookies for as long as I can remember. My mom always made home made icing, but we always cut cookies from the store-bought dough. While the cookies were always delicious, the actual appearance left something to be desired. It seemed that no matter how perfectly you executed your cookie cutting, by the time that cookie came out of the oven – it looked the same as all the others. Amorphous blobs of cookie dough.
Honestly, I always accepted the dismal fate of my cookies, UNTIL I found out that there was another way – a BETTER way. At my bridal shower in August, my Aunt Theresa made the most BEAUTIFUL cookies I had ever seen! They looked PROFESSIONALLY DONE! I was amazed by the gorgeous shape that the cookies kept, and begged her to share her secrets.
This Christmas, I decided to give these Christmas Sugar Cookies a try! I am happy to say they were a HUGE success!
Easy, Peasy Christmas Sugar Cookie Squeasy
Fortunately, achieving the perfect Christmas Sugar Cookie is NOT as complicated you would think!
What I love about this recipe is that it is SO easy. Naturally, with all the meal prep I do weekly, I have much more experience cooking, than baking. I wasn’t sure if achieving sugar cookie glory would easy (or possible!) for an amateur baker, BUT I was pleasantly surprised!
What I like about these Christmas Sugar Cookies is that they are hard to mess up, and you can prep them pretty quickly. You do not have to chill the dough before you put in the oven. The cookies bake time is relatively short as well, only baking in the oven for 6-8 minutes. Also, it is extremely easy to double and triple, so you can make lots of cookies for decorating this year!
Creaming the Butter
The one technique I did mess up the first time around was “creaming the butter and sugar together”.
First tip: make sure that your butter is SOFTENED, not melted. (aka don’t zap it in the microwave for 30 seconds. Instead, let it soften at room temp if you can, or shorter bursts in microwave).
Second tip: mix the two together for 2-3 minutes at 4-5 speed on your stand-up mixer. This moderate speed sufficiently aerates the butter and fills in with bubbles that can capture the gasses released by the baking powder. (For more detail – check out this blog post!)
Rolling the dough
After mixing the wet and dry ingredients in your mixer, turn out the dough on a floured surface. If the dough feels dry and crumbly, wet your hands and continue to knead until it reaches desired texture (see photo below / watch video!). If it’s too wet, add a bit more flour!
Roll the dough out to ¼ inch thickness. This gives the perfect not too thick, not too thin / not too soft, not too crisp consistency.

Christmas Sugar Cookies
Ingredients
- 1 cup granulated white sugar
- 1 cup unsalted butter softened, NOT melted
- 1.5 teaspoon vanilla extract
- 1 egg
- 3 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp of salt
Instructions
- Preheat the oven to 350.
- In a stand up mixer, cream butter and sugar at a moderate speed (4-5) until smooth (typically 2-3 minutes). Butter-sugar mixture should look light and fluffy, not overly liquidy/moist.
- Beat in vanilla extract and egg.
- In a separate medium size bowl, combine baking powder, salt, and flour. Add a little at a time into wet ingredients.
- Once the dough is too thick for the stand up mixer, turn out the dough onto a well-floured countertop. Wet your hands and continue to knead the dough by hand.
- Roll out the dough onto a floured surface and cut with festive cookie cutters. I roll my dough to be around ¼ inch).
- Bake for 6-8 minutes. Let rest on the cookie sheet till cool, then decorate!
