Cauliflower Fried Rice

Ingredients

  • 2 bags frozen riced cauliflower
  • 2 eggs
  • 1 bag mixed frozen vegetables
  • 1 tbsp olive oil extra virgin
  • 3 chicken breasts
  • 2 tbsp liquid aminos / soy sauce (or to taste, this is what I use)

Instructions

  • Preheat the oven to 425 degrees
  • Put the chicken on a baking dish. When the oven is preheated, put in the chicken for 20-25 minutes until cooked through. 
  • Shred the chicken and set aside
  • Heat the olive oil in a frying man over medium-high heat.
  • Add both the riced cauliflower and the mixed vegetables. Cook until the cauliflower and veggies have softened.

  • Make a well in the middle of the cauliflower.

  • Whisk the two eggs and put them into the middle of the well. Scramble. Once the egg is cooked mix it in with the rest of the rice. 
  • Pour liquid aminos over the rice. 
  • Add in the chicken and serve!
