Preheat the oven to 425 degrees
Put the chicken on a baking dish. When the oven is preheated, put in the chicken for 20-25 minutes until cooked through.
Shred the chicken and set aside
Heat the olive oil in a frying man over medium-high heat.
Add both the riced cauliflower and the mixed vegetables. Cook until the cauliflower and veggies have softened.
Make a well in the middle of the cauliflower.
Whisk the two eggs and put them into the middle of the well. Scramble. Once the egg is cooked mix it in with the rest of the rice.
Pour liquid aminos over the rice.
Add in the chicken and serve!
