I am actually writing this post as I eat these Paleo Breakfast Tacos for breakfast. Not to brag, but I can confidently say this is a recipe I have perfected; these things are ridiculously good. I am so excited for you guys to try this recipe because I have a feeling you are going to get hooked.
There is nothing more exciting than starting off your day with an insanely delicious breakfast that is easy to prep and makes you feel GREAT, and these Paleo Breakfast Tacos will do just that :).
Here are some tips on how to perfect this recipe!
Buy Ripe Avocados
Nothing is worse than slicing open an avocado and seeing a lot of brown spots. (The previous sentence was dramatic. There are a few things worse. But it’s still a pain.) Fortunately, I have some hacks to mitigate the over-ripe avocado risk.
To put it simply, make sure the avocado is not too squishy on the outside and is mostly black in color, if not a littttttle bit green. Be sure to peel off the stem – if it’s black/brown under the stem, it’s over ripe. If it’s green, you picked the perfect avo!

Buy Romaine HEARTS instead of a full head of Romaine
Romaine hearts, people. Romaine hearts. This is a subtle but crucial trick to save prep time while cooking and to save money spent at the store. If you buy a full head of romaine, the first few layers of lettuce are soggy and flimsy – not ideal for holding all of your yummy ingredients. Skip this wastefulness and go straight for the romaine hearts.
Romaine hearts typically come in a pack of three heads. Each of the three romaine heart heads is 100% usable and very sturdy as your little taco shell. Furthermore, the heart of romaine has a crunch that will add texture to your delicious Paleo Breakfast Taco.
MOST CRUCIAL BREAKFAST TACO INGREDIENT: Picante Sauce
If you make this recipe, I insist that you use Hot Picante Sauce to give the Paleo Breakfast Tacos their kick. Picante Sauce is typically found in the Mexican food isle at the grocery store, usually next to the salsa. In my opinion, Picante Sauce is 10x more flavorful than normal salsa and also has a better consistency for most recipes.

When I first started making Paleo Breakfast Tacos, I would sauté onion and tomato to add additional flavor instead of using Picante sauce, but I was disappointed by the blandness. Once I tried Picante Sauce for the first time, it was over. The X-factor had been identified, and there was no going back.
My Paleo Breakfast Tacos have dramatically improved my mornings, which is why I wanted to share the recipe with you all. They are clean, healthy, and easy to prepare, while also helping to mix up my morning breakfast routine and keep a good amount of variation in my diet. Paleo Breakfast Tacos
Ingredients
- 2 large eggs
- salt and pepper to taste
- 1 tbsp milk
- 1-2 leaves romaine lettuce
- 1/2 oz cheddar cheese
- 1/4 avocado
- 1 tbsp picante sauce
- red pepper flakes (optional)
- cilantro (optional)
Instructions
- Crack two eggs into a bowl. Add milk, salt, and pepper. Whisk until thoroughly mixed.
- Spray a frying pan with non-stick cooking spray. Pour egg mixture into pan and cook eggs until scrambled.
- Lay one or two pieces of romaine lettuce onto a plate. On top of lettuce, add scrambled eggs, sprinkle of cheese, slices of avocado, and picante sauce.
- Enjoy!
