Ingredients
2large eggs
salt and pepper to taste
1tbspmilk
1-2leavesromaine lettuce
1/2ozcheddar cheese
1/4avocado
1tbsppicante sauce
red pepper flakes (optional)
cilantro (optional)
Instructions
Crack two eggs into a bowl. Add milk, salt, and pepper. Whisk until thoroughly mixed.
Spray a frying pan with non-stick cooking spray. Pour egg mixture into pan and cook eggs until scrambled.
Lay one or two pieces of romaine lettuce onto a plate. On top of lettuce, add scrambled eggs, sprinkle of cheese, slices of avocado, and picante sauce.
