Ingredients

  • 2 large eggs
  • salt and pepper to taste
  • 1 tbsp milk
  • 1-2 leaves romaine lettuce
  • 1/2 oz cheddar cheese
  • 1/4 avocado
  • 1 tbsp picante sauce
  • red pepper flakes (optional)
  • cilantro (optional)

Instructions

  • Crack two eggs into a bowl. Add milk, salt, and pepper. Whisk until thoroughly mixed. 
  • Spray a frying pan with non-stick cooking spray. Pour egg mixture into pan and cook eggs until scrambled. 
  • Lay one or two pieces of romaine lettuce onto a plate. On top of lettuce, add scrambled eggs, sprinkle of cheese, slices of avocado, and picante sauce.
